Director Koki Shigeno’s documentary portrait of ramen chef Osama Tomita is a foodie’s dream. Known as the king of ramen, Tomita presides over Matsuda, where people are more than willing to travel over an hour from Tokyo just to try his famous soup. Filming over fifteen months, Shigeno documents Tomita’s obsessive search for the perfect ingredients—the freshest pigs’ heads, the most delicious garlic—and his technique of simmering broths for days on end and mixing them to get just the right seasonal flavor. Along the way, we learn the history of this classic Japanese comfort food and meet other renowned ramen chefs and the culinary pilgrims who patronize their restaurants. “An appetizing look at the ultimate Japanese comfort food.” (Alissa Simon, Variety).
